For those with deep pockets, and a taste for fine-dining Japanese, Minamishima is a small restaurant that offers 2 forms of degaustation; firstly, a 15-course sushi degaustaion from the sushi bar, or a 10-course mixed degaustation at one of the few tables. Bookings are essential.

Vue de monde - Rialto, Level 55/525 Collins St, Melbourne

We all know Vue de monde - and we all know Shannon Bennett (see ApartmentDevelopments.com.au's interview with him here). But it really is one of the best. No description is needed for this modern-Australian wonderpiece.

Attica - 74 Glen Eira Rd, Ripponlea

Not one of the most elite or beautiful areas, but Attica sure as hell makes up for it. Located in a (somewhat) discreet location, Attica has been dubbed Australia's best restaurant for multiple years, and with an eagerness to develop their own produce, it leaves little to question why they have that title.
